Easy Avocado Soup
Yield: 2 large bowls or 4 small bowls
- 2 ripe avocados
- 1 cup vegetable broth
- 1 tablespoon lime juice, freshly squeezed
- 2 tablespoons plain yogurt (or sour cream)
- 1 teaspoon salt, more to taste
- 1.5 cups water
- SUGGESTED TASTY TOPPINGS...
- Red Bell Pepper, diced
- Sweet corn, freshly cut off the cob
- Jalapeno peppers, sliced
- Bacon, cooked and crumbled
- Crumbly cheese, such as Cotija
- Cilantro
- Using a food processor, blend the avocado, vegetable broth, lime juice, yogurt and salt until creamy and incorporated.
- With the food processor going, now add 1.5 cups of water. If you prefer a thinner soup, keep adding water until it is the right consistency for you.
- Add any toppings to the bottom of your bowls, then slowly pour in the soup around the toppings.
