Mexican Mule Cocktail

Ingredients
  • 2 ounces tequila
  • 1 ounce pineapple juice
  • ½ ounce lime juice, freshly squeezed
  • fresh ginger, a total of 1.5 inches cut into 2 large pieces
  • jalapeno pepper, 2 thin slices
  • spicy ginger ale or ginger beer
  • fresh pineapple slice, for garnish
Instructions
  1. Place the jalapeno and ginger slices in the bottom of a cocktail shaker. Add the pineapple and lime juices and gently muddle together. Then strain the infused juice into a small bowl using a fine mesh strainer.
  2. Combine the tequila and infused juice in the shaker filled with ice. Shake until chilled and then pour into your ice-filled mugs.
  3. Top it off with the ginger ale and garnish with fresh pineapple slices.
