Cucumber Strawberry Summer Salad
Yield: 10 servings
  • 3 large cucumbers, thinly sliced
  • 1 package fresh strawberries, about 16 ounces, sliced
  • 4 oz feta cheese, crumbled
  • ½ teaspoon salt, more to taste
  • poppy seed dressing
  1. Using a mandoline or sharp knife, slice the cucumbers into very thin slices. Using a knife, hull and slice the strawberries. Combine cucumbers and strawberries in a large bowl with ½ teaspoon of salt (or more to taste).
  2. Crumble the feta cheese into the cucumber and strawberry mixture. Then drizzle the dressing on top.
If not serving immediately, cover and refrigerate the cucumber and strawberry mixture and wait until you are serving to add the feta cheese and dressing.
