Cranberry Oatmeal and White Chocolate Cookies
Yield: 3 dozen cookies
  • 2 sticks of butter, softened
  • 1 cup brown sugar, packed tightly
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1.5 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 3 cups oats
  • 1 cup white chocolate chips
  • 1 cup dried cranberries
  1. Heat the oven to 350 degrees.
  2. In the bowl of an electric mixer, beat together butter and sugars until creamy. Add eggs and vanilla, mixing well until all is incorporated.
  3. Combine the flour, baking soda, cinnamon, and salt in a separate bowl. Gradually add the dry ingredients to the butter and sugar mixture, mixing until just combined.
  4. Using a rubber spatula, gently stir in oats, chips and cranberries by hand.
  5. Use a heaping spoonful of batter per cookie and place onto an ungreased baking sheet.
  6. Bake for about 8-10 minutes, or until the edges begin to brown.
