Banana Pudding from scratch!
Yield: 8-10 servings
  • ⅔ cup sugar
  • ⅓ cup all-purpose flour
  • ¼ teaspoon salt
  • 3 eggs, beaten
  • 2 cups milk
  • ½ teaspoon vanilla extract
  • 2 tablespoons butter, softened
  • 4 bananas, peeled and sliced
  • ½ (12 ounce) package vanilla wafer cookies
  1. Combine sugar, flour, and salt in a medium saucepan. Add the eggs and stir well.
  2. Stir in milk and cook over low heat, stirring constantly.
  3. Once mixture thickens, remove from heat. Continue to stir to allow pudding to cool slightly.
  4. Stir in vanilla and butter until smooth and incorporated.
  5. Starting with a layer of vanilla wafers, layer the pudding, bananas and wafers in a serving dish.
  6. Chill at least one hour in refrigerator before serving.
