Dark and Stormy cocktails have a special place in my heart. If you have read our About Us page, you might remember us mentioning that we had our first date at an amazing gastropub. It’s called Leon’s Full Service and they can make a darn good cocktail. You know, the kind where you often only recognize one of the ingredients in the drink. Sometimes that can be intimidating, and it seems easier to stick to beer or wine, something familiar.
One rainy night we happened to have a server who was extra friendly – and not at all in the annoying, never leaves you alone sort of way. He was eager to talk about cocktails. He wasn’t pushing them as much as he was passionate about them and was eager to help us get more familiar with the concept of craft cocktails.
He encouraged us to take a chance and had the perfect deal to entice us. They offer $5 Dark and Stormy specials when there is rain falling from the sky. Also, I should mention, I had actually heard of all the ingredients in this cocktail, and Leon’s uses a homemade ginger beer that cannot be beat. If you’re not quite up to making homemade ginger beer, try your hand at brands like Goya, Reed’s, or Goslings.
That was the beginning of our relationship with cocktails. We laugh about it now because we’ve come a very long way in our understanding and appreciation for those complex recipes and specialized ingredients. And we plan to share a lot of that with you on this blog. So don’t be nervous. Start with this simple recipe and see where it takes you.

- 1.5 ounces dark Rum (we use Kraken)
- Juice of one lime wedge
- Lime wheel, for garnish
- Ginger Beer, the spicier the better
- Fill your glass with ice and add the rum.
- Squeeze the juice from the lime wedge into the glass of rum. Then top with a decent amount of ginger beer!
- So easy and delicious! Play around with your ginger beer amounts to get it just the way you like it.
