Before summer comes to an end, I need to share this Banana, Nutella and Pistachio Popsicles recipe with you. It’s my duty. I feel that my love for this popsicle is partially nostalgic because it was the first homemade popsicle recipe I ever made. But I also think I can objectively say that it is one of the best popsicles I’ve ever had the pleasure of having in my freezer. The combination of banana and Nutella cannot be beat, and the addition of salty, crunchy pistachios puts it over the top.
I should also point out how dangerously easy these pops are to make. Blending bananas and spices is as hard as it gets, and that’s as hard as pushing a button. So I find myself making these more often because there’s hardly any time commitment and very little cleanup.
I learned this recipe from the absolutely wonderful Smitten Kitchen blog. If you don’t know Smitten Kitchen and you don’t own her cookbook, you have to check both out. As I made these popsicles to post on the blog, I thought long and hard about ways that I could adapt the recipe and improve this easy popsicle. But honestly, it’s perfection the way it is. It’s just perfect. Why fix it if it ain’t broke, right?
So I share this amazing summer treat with you pretty much as I found it. Just made a bigger batch so I could fill every single one of my popsicle molds, because more popsicles? Know any great banana popsicles recipes? Feel free to share in the comments!
- 5 large bananas
- ½ cup nutella
- ¼ teaspoon cinnamon
- ½ teaspoon vanilla
- ⅓ cup roasted and salted shelled pistachios, crushed
- Peel the bananas and divide into fourths. Place the banana pieces in the food processor along with the cinnamon and vanilla. Blend until the mixture is completely smooth. You should have about 2.5 cups of banana mixture.
- To easily add the nutella to the popsicle mold, it is best to place the nutella in a small ziplock bag. Using scissors, cut a very small corner off of the bag.
- Now you are ready to assemble the pops. Start with a layer of banana in each mold. Then squeeze the nutella on top of the banana layer. Keep alternating until the molds are nearly full. Most people recommend leaving a little space for expansion during freezing.
- Cover popsicles and insert wooden sticks. Then freeze for at least 5 hours or overnight.
- To easily remove pops from molds, run warm water on the outside of the mold for about 5-10 seconds.
- To serve, place the crushed pistachios on a plate and then gently roll the popsicle in the pistachio until desired amount is on the pop! And enjoy!
